Chewy Peanut Butter Bars



Sometimes, it's 9 at night at you just need.to.bake. Forget making or cleaning up dinner, putting away the laundry, and the three year old running circles around the house with a pretend hose putting out fires and using the dog as a fire truck. Oh wait, is that just me?

This recipe is so incredibly simple, it can go from the bowl, to the pan, to the oven, and done in 30 minutes. Hopefully by then, you get your firefighter in the bath and in bed before the timer goes off so you can dive face first into the pan. Just be sure to let it cool a little...face burns are never fun. 


Ingredients
1/2 cup butter, cubed
1 cup creamy peanut butter
1-1/2 cups sugar
1 cup all-purpose flour
2 eggs, lightly beaten
1 teaspoon vanilla extract

Directions
In a microwave-safe bowl or a small sauce pan, melt butter and peanut butter until completely combined and smooth. In a bowl, combine sugar and flour. Add butter to the mixture and mix until all ingredients are combined. Beat in eggs and vanilla.

Spread into a greased 13-in. x 9-in. baking pan. Bake at 350° for 28-32 minutes or until lightly browned and edges start to pull away from sides of pan. Cool on a wire rack.
