Lentil and Rice Casserole


Happy Tuesday! I love easy Tuesday dishes. Made ahead of time, or even better - preppred quickly that day and baked off, is essential for busy Tuesdays when I am only home for an hour and a half. 

Other than this side dish being very tasty, the best part is the prep time. I guarantee you that when you set your oven to preheat, you will have all of the items mixed together and ready to go in the oven by the time the buzzer goes off. 

Ingredients 

3 cups broth (chicken or vegetable)
3/4 cup lentils
1/2 cup brown rice
3/4 cup chopped onion
1 teaspoon Italian seasoning
heaping ¼ teaspoon garlic powder
1 cup grated cheese (cheddar or a blend is preferable)

Directions:

Preheat the oven to 300 degrees.
Mix all ingredients except the cheese in a baking dish. Cover with foil and bake for 1 hour 10 minutes. Remove foil, add the cheese, and bake for an additional 10 minutes or until cheese is melted.
